These old-fashioned soft cookies are a favorite around here. You know why? They’re delicious.
My hubby likes sweets, and I am constantly trying to make recipes both healthier and less reliant on store-bought ingredients. Of course, the blend is a constant work-in-progress, but I happen to think this one is quite successful!
Apple Granola Cookies
1/2 cup lard (substitute butter or shortening)
3/4 cup honey
2 tablespoons molasses
2 eggs
Mix thoroughly then add:
2 large tart apples, grated
1/2 cup sunflower seeds
1/2 cup dried cherries or raisins
1/2 cup chopped walnuts
1 teaspoon cinnamon
1/2 teaspoon cloves
1/4 teaspoon ginger (or substitute fresh minced)
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
Blend thoroughly, then add:
1 cup old-fashioned rolled oats
2.5-3 cups flour (exact amount depends on how large those apples were!)
Drop by the rounded teaspoonful onto cookie sheets. Bake at 325 degrees for about 15 minutes, until golden brown on the bottom. Makes about 5 dozen.
