Just before Christmas, I was in a local store that specializes in bacon, sausage, and deli meats but also has a section of imported grocery items. While I waited for my order of bacon to be sliced, I glanced around the small retail area and spied a display of little jars of assorted flavors of hot chocolate mix. Gingersnap hot chocolate! Oh, YUM. That sounded amazing.
The grandkids would soon be coming for a few days, I reasoned. They’d surely enjoy this treat… and I would make myself ONE mug of it to test the flavor profile and see if it was something I wanted to play with for myself.
As you can see, I loved the blend and set out to research something similar that I could enjoy as a Trim Healthy Mama. I did an online search and found a few keto recipes. Good… but not quite matching the flavor I had in my head. I tested the THM Hot Chocolate Trimmy and added spices, and it still wasn’t quite what I was looking for. Then commenced a few weeks of tweaking and testing until one day I realized I wasn’t tweaking anymore! So, may I present a Gingersnap Hot Chocolate mix that is a THM FP (no significant fat or carbs) and keto-friendly?

Mixes like this are a little fiddly to do every time you want a mug, so I’m presenting two ways to make a bulk mix. In the first scenario, you set out a row of small containers then measure each ingredient into each container until they’re all prepped. You do not need to mix them in the container. The bits of (optional) wet ingredients can simply be put in a “well” in the dry ingredients so they don’t stick to the container side. They’ll be fine that way indefinitely.
If you’re making the bulk mix, however, I recommend dumping everything into a food processor and blending really well before putting the mix in a storage jar.
I’ll give both the single-serve recipe and the bulk mix recipe below. Maybe try the single-serve first to be sure you love it before committing to 16 servings!

Recipe: Gingersnap Hot Chocolate (THM FP) Single-Serve
In a bowl or small jar, put the following. Heat a mug of nut milk in the microwave or on the stove-top, leaving a half inch of head-room. Pour in the dry mix and use a frother to blend it into the hot nut milk. Add a little heavy whipping cream if you like, and a few drops of English Toffee stevia brightens the flavor just a touch.
• 1 tbsp collagen
• 1 tbsp unflavored whey protein isolate
• 1 tbsp cocoa powder
• 1/8 tsp salt
• 1/2 tsp sunflower lecithin powder
• 2 tbsp Swerve brown sugar substitute*
• 1/8 tsp ginger
• 1/2 tsp cinnamon
• 1/2 tsp caramel extract
• 1/2 tsp blackstrap molasses* (optional: see note below)

Recipe: Gingersnap Hot Chocolate (THM FP) (16 serving bulk mix)
• 1 cup collagen
• 1 cup unflavored whey protein isolate
• 1 cup cocoa powder
• 2 tsp salt
• 3 tbsp sunflower lecithin powder
• 2 cups Swerve brown sugar substitute*
• 2 tsp ginger
• 3 tbsp cinnamon
• 3 tbsp caramel extract
• 3 tbsp blackstrap molasses* (optional: see note below)
Blend all ingredients in a food processor or stir very, very well in a large bowl, making sure to fully incorporate the wet ingredients. Label and store the mix in a tightly closed jar or container. When the urge for a Gingersnap Hot Chocolate hits, heat a mug of nut milk as above then measure in 1/3 cup of the dry mix – yes, it seems like a lot! Blend the powders in with a frother or mix everything in a blender. I’ve got to say, I love my frother, though!
* NOTE: Don’t have any Swerve brown sugar substitute on hand? I usually don’t. Use the same amount of monk fruit/ erythritol blend or another approved sweetener and add the blackstrap molasses to the dry mix. It will mix in just fine.
