In “Beneath the Surface” (part of Rainbow’s End), Madison Wallace is a city girl with country girl roots. When she finds herself back in her rural hometown for the summer, one of the first things she does is go to her grandma for a cooking lesson. After years of takeout, she needs to reacquaint herself with the kitchen. Here is the apple pie recipe Madison and her grandma like best:
Grandma Wallace’s Dutch Apple Pie
9 in deep dish pie crust
6 cups Granny Smith apples (peeled, cored and sliced very thinly)
2/3 cup sugar
1/3 cup flour
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp allspice
Streusel topping (mix these ingredients with your finger until it resembles coarse crumbs)
1 cup quick oats
1 cup packed brown sugar
1/2 cup all purpose flour
1/2 cup cold butter, cut into cubes
Combine flour, sugar, cinnamon, spices with apples. Toss until apples are coated. Pour apple mixture into pie crust and dot with butter. Bake at 425 for 10 minutes and remove. Reduce oven temperature to 375. Place streusel topping over apples, loosely cover with foil and bake for 35 more minutes.
